  • ±25 grams of chili flakes (more or less to taste)
  • 2 tablespoons sesame seeds
  • 1 teaspoon sugar or other sweetener
  • ½ teaspoon salt

Preparation method:

  1. Preparation: Place the garlic, chili flakes, sesame seeds, sugar and salt in a saucepan.

  2. Heat the oil: Heat the oil in another pan over medium heat until it reaches 160°C. You can measure this with a kitchen thermometer, but if you don't have one, you can let the oil heat until you see it just beginning to shimmer and small bubbles appear when you drop a piece of garlic into it.

  3. Pour and sizzle: Carefully pour the hot oil into the other pan over the spice mix. It will sizzle and fizz, so be careful! This is when the flavors fully develop.

  4. Stir and cool: Stir the contents immediately to mix the flavors well. Then let the chili oil cool completely.

  5. Storage: Pour into a clean glass jar, close tightly and store in the refrigerator. The chili oil will keep for several weeks.
