These delicious Pumpkin Spice Buns with mascarpone are super fun to look at and you only need a few ingredients, making them very easy to prepare. Even if you have little experience in the kitchen, this recipe is achievable! The pumpkin spice in these buns provide a pleasant autumn scent in your home. Whether you have them for brunch, with the fika or just eat it as a snack: enjoy!

Ingredients
- 1 package of croissant dough for 6 large croissants
- 100 g mascarpone
- 2 tablespoons pumpkin spice
- 2 tablespoons brown caster sugar (extra for the topping)
- 1 egg
Preparation
- Preheat the oven according to the croissant dough packaging.
- Roll out the croissant dough on a cutting board or other clean surface. Carefully close the diagonal cut indicator lines in the dough with your fingers.
- Mix the mascarpone, pumpkin spice and brown sugar in a bowl. Mix until you get a smooth and even mixture.
- Cut the dough into three large squares (follow the lines)
- Divide the pumpkin spice evenly over the croissant dough with a knife or the back of a spoon.
- Roll up the croissant dough along the shortest side. Then cut the dough completely in half, except for the last piece, to make it easier for the dough to hold together (see the picture).
- You now have three strands that are still connected on one side. Now carefully weave the strands over each other, trying to get the inside with it pumpkin spice mixture a little on top. See the picture for reference.
- Now place the end of each dough 'braid' in the center and drape the rest of the dough around it in increasingly larger circles. Tuck the other end of the dough under the bun so that it looks nice and round.
- Beat an egg and brush the top of the rolls with it.
- Sprinkle some brown sugar over the buns and place them on a baking tray lined with baking paper.
- Bake the Pumpkin Spice Buns in the oven for 15-20 minutes. This may be a little longer than the package recommends, but because these rolls are a little larger, they will take a little more time in the oven.
- After they have turned a nice golden brown in the oven, take them out and let them cool down.
- Serve them and enjoy!
