Now that traveling is off limits for a while, not possible or at least a bit less easy, you are just going to long for holidays and weekends away. Greece is one such destination that I look back on with pleasure. Long ago a week in Crete was wonderful and on the beautiful island of Santorini we also had such a good time. Now that we're not going to travel this summer, we're just bringing all the tasty things to us from afar. Cooking a dish from a holiday country and a nice sun goes a long way!


Greek food is always popular here at our house. We make mousaka quite often, like to eat tzatziki and kleftiko (pouches with lamb) I really like. But the most eaten here is Greek salad. I used to eat that often at my parents' house and now I still make it at least once a month. The trick is to use really tasty ripe tomatoes and good feta. Then you can't go wrong!

Now there are many ways to make a Greek salad and this is one. By adding the chicken and pearl couscous, it is a complete meal salad. But the quick, fresh dish without those two additions also easily passes for a tasty side dish.

  • 335 grams of pearl couscous
  • 440 grams chicken thigh strips
  • 2 tbsp oregano
  • 1 piece of romaine lettuce
  • 5 pieces of plum tomato
  • 1 pcs cucumber
  • 2 pieces of red onion
  • 100 grams of feta
  • 2 pieces of lemon
  • 4 tsp honey
  • 1 tsp cinnamon
  • jar of pitted black olives
  • 700 ml vegetable stock
  • olive oil for frying
  • extra virgin olive oil
  • freshly ground black pepper and salt


Pearl couscous is larger than the fine couscous that you see more often. It is also called ptitim, Israeli couscous or Jerusalem couscous. Pearl couscous is made from coarsely ground durum wheat semolina, just like regular couscous.

Method of preparation

  1. Prepare the broth in a pan with a lid. Add the pearl couscous and cook the pearl couscous, covered, for 12 - 14 minutes until dry. Stir regularly to prevent sticking. Meanwhile, heat the olive oil in a skillet over medium heat. Bake the chicken thigh strips with 1 tbsp oregano in this for 6 - 7 minutes.

  2. Meanwhile, cut the romaine lettuce into strips and add to a salad bowl. Cut the tomato (remove the seeds) and the cucumber into small cubes and chop the red onion. Add the tomato, cucumber and onion to the romaine lettuce. Crumble the feta.

  3. Juice 1 lemon and cut the other into wedges. In a small bowl, lemon juice (to taste), 4 tbsp extra virgin olive oil, 4 tsp honey, Mediterranean herbs, 1 tsp cinnamon and season with salt and pepper. Add the dressing to the salad bowl and mix well.

  4. Divide the salad over the plates. Spoon the pearl couscous and chicken thigh pieces over this and garnish with the feta, olives and lemon wedges.

A delicious summer recipe for after a day at the beach, at the barbecue or as a side dish for a cozy picnic .
