Ingredients
- 150 grams of oatmeal (grind the oatmeal in a blender)
- 50 grams of almond flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- pinch of salt
- 2 eggs
- 2 ripe bananas (mashed)
- 100 ml unsweetened applesauce
- 2 tablespoons honey or maple syrup
- 1 apple (cut into small cubes)
- Handful of walnuts (coarsely chopped, optional)
Preparation method

Preheat the oven to 180 degrees and place muffin cups in a muffin baking tin .

Mix the dry ingredients : Place the oat flour, almond flour, baking powder, cinnamon, nutmeg and salt in a large bowl.

Mix the wet ingredients : Beat the eggs until smooth. In another bowl, mix in the mashed bananas, applesauce and honey or maple syrup.

Combine Wet and Dry : Add the wet mixture to the dry ingredients and mix well. It doesn't have to be perfectly smooth.

Add the apple and extras : Stir the apple cubes and, if desired, the walnuts through the batter.

Fill the muffin cups : Divide the batter between the 12 cups. Fill them to about ¾ full.

Bake! Place the muffins in the oven and bake for 20-25 minutes until golden brown. Check with a skewer if they are done: if the skewer comes out clean, your muffins are done.

Cool and enjoy : Let the muffins cool for 10 minutes in the pan and then completely on a wire rack. Time to enjoy!
